I Love Cornbread.

Continuing in my newly reawakened vein of randomness, I wanted to tell you that I made cornbread today. It was from those Jiffy mixes, you know the ones - the tiny little boxes that look like they were made for an Easy Bake Oven. Wow. I had an Easy Bake Oven and I completely forgot about it until just now, I made a cake in it that was kind of like a soupy brownie, which I baked under a very hot lightbulb and nearly burnt myself removing from the hot plastic oven with the flimsy spatula that came with it. I think I shared it with my brother and sister, but now I don’t remember. I’m pretty sure I remember that Mom did NOT want to eat any.
Where was I?
Oh right. Jiffy mixes! I love Jiffy mixes. So inexpensive, yet so full of yummy. And, as a delicious bonus, they always come with at least one other recipe on the box that you can use the mix for instead of what’s labeled. For instance, muffins come with a pancake or a cookie recipe. Good times.
So anyway, I made cornbread today, and then when I was in the middle of this post about cornbread (because I am so obviously bored out of my mind!), my kids called! For the first time since they went on vacation TWO AND A HALF WEEKS AGO, the little boogers!
I miss them something fierce, but this year was easier than last year. I knew I’d be lonely and bored, so I was ready for it (or readier for it, i guess) - and besides, I’ve been so distracted by being tired and exhausted that frankly, I had less time to think about it this year anyway.
I love cornbread, but not as much as my kids. :) That phone call made my day.
Oh, and also, I took a fifteen week belly shot. There ya go.

I love Jiffy Cornbread, too. That is all my mom used to make as a kid (the brand). I love your belly shot. When I was preggers, I didn’t look cute, just fatter. Happy you got to hear from your kids as well.

Cornbread is the best, especially if you put it in the cast-iron skillet to bake. YUM!
You are simply adorable! I’ve never seen your picture before and forgotten that you are pregnant. And well, I’m not only a sucker for red-heads, but I’m a sucker for a bump, too!

If you mix a box of Jiffy yellow cake mix and a box of Jiffy cornbread mix together and make it according to the directions on both boxes but mixed together… well, it’s like heaven.

My doctor changed my due date. I’m now due the 16th instead of the 10th. I’m sad.

Give me cornbread.
There are some excellent Cajun and Zydeco tunes about cornbread. I have a huge craving for both the food and the tunes right now.
